When the line moves it tells you that people are favoring LSU...it started at -1 ( a pickem at one point) then it moved to -3

Yes but even when they set the line they don't think "LSU will win by 1" it's more like "we will get as much action on either side if we make LSU a 1-pt fave."
I do agree with you that even 0.5 point can sometime be deadly
TCU -2.5 is the most recent example.
