I couldnt begin to tell you how to do that but I will tell you a good different way I do it. A whole head cored and wrapped in aluminum foil. Salt and pepper and put a half stick of butter into the core. Then close and put on bbq pit for an hour or so. Last ten minutes open the foil top to let it get some smoke flavor. Really good.
