i dont know anythig about the restaurant but i dont think price will be a problem in that location

He is going to have a really hard time convincing people in Lafayette to pay those prices for cajun food. Some of the non cajun items maybe he can work but the biggest knock I have on Couchon is that its overpriced for items I can get in the lafayette area MUCH better for a couple of bucks at a gas station. In New Orleans he can get those prices because there really isnt much cajun food to choose from but I just dont see it in Lafayette.

These will just get simply laughed at:

crawfish pie $8
fried boudin with pickled peppers $8

Nobody in Lafayette is going to pay 8 dollars for boudin that wouldnt even touch what they can get in most gas stations in their area.

Your point is dead on as to pricing, but I think you're off the mark on the quality issue.

Some places may be able to match his quality, but I'd put his up against any of those gas station places across the board. Those places can be hit or miss, and probably none have the sort of high end type restaurant attention to detail he's getting.

Again, this isn't a knoci on those places, as I'd still have a really hard time justifying paying what he's charging over paying what they are to eat the stuff.

relative to what people in the area pay for the same type of food, it is pricey.

for instance, i went the other day and paid $8 for 3 boudin balls the size of a normal hush puppy. Like i said, i dont know that particular area...if the people are well off, they'd probably be willing to pay that. But i doubt the average Lafayettian would



as far as comparing it to Zea's, the prices are similar on the surface, but get more food at Zeas. Considering you can get a 1/2 chicken or a large rack of ribs or any other entree with 2 side items included in the price. A side at Cochon is an extra $5 alone.

Exactly. Most will get larger boudin balls, typically priced about $3 for two or three.

I like Cochon in New Orleans I have been a few times and even to a couple of private events that Link held. I like it when Im in New Orleans.

However there isnt many places in Lafayette I would honestly say his boudin can compete with.

I can get 3 large fried boudin balls from best stop for less than 2 dollars. Even if they were 8 dollars I would choose the best stops over Link's 100% of the time.

Like I said some of his exotic items that you just dont see I can see go very well. But he has to clean up that menu or lower some prices.

Basically decent Boudin = novelty in NOLA so it sells for 8 dollars. No way that sells in Lafayette.

I just don't see myself going to a restaraunt and ordering boudin, regardless of the price.

A group of total coons(myself included) frequent the NOLA location on a regular basis and everyone enjoys a little different take on the gas station regulars. As far as price, its not much more(if any) than Bonefish(same area) and that place is packed 24/7.

I think it will do great in Lafayette and probably become one of the new "be seen" places, which Lafayette is a huge fan of.

that is key.

if it becomes a place to be and hang out the food prices wont' matter...people will pay to be cool, and the food will be secondary. But, it's revenue just the same.

I have been to Cochon twice and i was not impressed in the least either time.

If you're going to name your restaurant "cochon" you better bring it, and cochon fails to do so.

I've never heard of Cochon's, but I did eat at Prejean's Sunday for lunch and I paid $20 for fried catfish (it was damn good too, baked potato was shitty though). So that makes me believe that there is a market for a place like Cochon's by the way you are describing it.
