Econ is a decent minor to tack onto a finance or acct degree (I did it). It's also a good lead into law school. The old curriculum of getting your Econ Degree through the college of business had a pretty useful course load, but no one was doing it, so they axed the program.
Outside of engineering and business school, there's not much to do with a bachelors besides go to grad school or get a job that requires "a college degree". Right now, even engineering and business kids are taking the MBA route.
Architecture doesn't count, it's a 5 year program and I think they get a master's upon completion.

Not in my experience. Most of my engineering peers went directly to work in an engineering related field or continued with their masters in engineering. The MBA'ers go after 4-5 years. But that was before the recession.
