Typically, places that employ wait "teams" as Stella does, will have a tip pooling system.

I would figure that the head waiter would get the biggest % and the secondary staff would get less. In this case it sounds like the secondary staff acted as his head waiter. So if they get less than the real head waiter then I dont know that I would want to tip more.

Alot of your higher end places do the team approach. I can't remember which place it was, but I remember once I had the "top" waiter come and read the specials, take the order, then take the wine order and that was the last I saw of him. I guess they figure the #2 and #3 person can deliver food and keep drinks full.
