PUT THE KNIFE DOWN!!!
Make a nice sauce with your onions and garlic. Sear both sides, little butter, roast on low temp for 6 minutes, let rest. There is no reason to stuff that thing.
I'm assuming the "throw it in the oven for a couple of hours" is a typo.
