Boil whole chicken with seasoning, onion, celery and a few pods of garlic
debone chicken and run through a grinder (not a chopper)
For a half of the chicken I use 5-6 boiled eggs mashed with a fork chop onion and celery. Mix together with mayo (blue plate) add black pepper and salt if needed. Save the chicken stock.

Close to what I do, except no celery. Grinding is the key. I add low sodium chicken base to the mayo before mixing.
