I got you bro.

Common problem with a Google wifi is you can't separate the 5G band, and Eufys can't use the 5G band.

So what you have to do is use the technology against itself. The 5G band doesn't travel as far as the 2.4G band.

Take the device as far from the router as you can but where you still have a connection to the network (your phone too im assuming you're using for setup). You won't have a visual cue besides perhaps your wifi signal on your phone looking "weak," but this will force Eufy/your phone to use the 2.4 band for setup.

Once you connect, you can move everything where you need it. Its only setup that is an issue.

It's raining right now so I'm not going outside to get to the edge of my WiFi coverage to force 2.4 connection with Google Home but when I try to connect my 2.4 camera again do I need to run an extension cord to with my camera and phone to force the 2.4 connection? Or should I just leave the camera inside and walk to the edge of my wifi with my phone only?

What a pain in the arse...

Just to be safe. Run the router out one end of your house on 100ft extension cord and ethernet, then another 100ft cable out the other end with your camera and phone. Only then may you enjoy your technology.
