Don't get too caught up in perfect quality. That's something for people with 6-figure subs trying to get to 7-figures. You can do something like that with a decent USB mic. Bigger thing to concentrate on is mic placement and avoiding excess noise.
Pro tip: go look on FB Marketplace. I always see about 1 new podcast setup being dumped for pennies every other day or so.
