That's the only way it was cooked in our house when I was a kid. My dad caught them and cleaned them by skinning and then just gutting them. They were fried whole in a black iron pot.

Back when I was a kid, not many people would filet fish, but after I started doing it, that is the only way I'll cook fish now. To hell with dealing with bones and uneven cooking with the thin tail meat and thick meat near the head area.

Place on the Cooper River outside of Charleston used to do all you can eat whole small catfish. Corn meal crust, delicious. Always ate the crispy fins first.
