Y'all have any recommendations? Really just looking for a consistent scale to track weight, but open to options for body compositions/ fitness tracking.

Happy with the one from Withings.

Just get a cheap one off Amazon.
If you are using the same scale every morning it should be close enough to track if your weight is going up or down week over week.
Unless you are needing to track weight for some competition. Then you might want to get a nicer more calibrated scale.

I have a Renpho off of amazon. All seem to work about the same I spent a little extra on a rechargeable one. Seems to work fine. No complaints. Syncs to your phone if you want to track it.

My wife got me a pretty basic scale from Amazon a little over 2 years ago. Company is ABYON. It's been extremely solid for a $30 smart scale (4.6 stars with 21000+ reviews).
Has a nice app that syncs with a couple other apps (Fitbit, Samsung Health, and Google Fit). Battery life is EXCELLENT. Almost positive it's still running on the original batteries and I use it almost daily. Like most other home scales, all the extra measurements are just calculations so you have to take them for what they are.
Edit: After seeing the Renpho suggestions, I looked it up. Pretty much identical to the one I have. Even the app looks the same (just a different color).
