One thing I do is track my weight in excel and graph it over time. Then I add a trend line so I get a good idea of when I’ll reach my goal weight, or what my weight will be around beach vacation, etc. Has worked pretty well for me
Only other thing I track in excel is my workouts. I found a year calendar online and I highlight the days I worked out, color coded with the program I ran. I have all my workout history in the Strong app but this is kind of a good visual. Use it for planning as well, figuring out when an 8 or 12 week program would end, etc.

I don't have enough data in the current iteration of the file to pay much attention to it but it's another good thing to look at
Meaning to implement this as well. For right now I just have a brief description of the lifts/muscle groups work so I can manage rest days and keep on a good rotation.
