A few things to think about:
First, Portland is a great city with lots of good restaurants and bars. Plenty of hotels in town, or you could look into a place on the water like Inn By The Sea in Cape Elizabeth.
Not aware of any wineries, but there is the Alagash Brewery in Portland. You can pay a little money to get their curated experience.
The rest depends on what you want to do. Maine is a great state, but it’s big. If you want to do outdoor stuff, make sure it’s not when the black flies are out.

Bissell Brothers is in Portland, Maine Beer Company is in Freeport. Both are great.
My favorite place to eat outside of Acadia is Sweet Pea's.
