The Old Lahaina Luau is the best but I'm not sure when they will re-open since the fire. I just saw on their website that they've cancelled everything thru at least Jan 31 but hopefully they'll be back in business by April.
We loved the Road to Hana! If you want to visit the black sand beach at the state park, you need to make a reservation in advance.
For ziplining, we did North Shore Ziplines, in part because it seemed to be relatively tame as we had one person in our group who was hesitant about going. Imo, it was really expensive and a little too tame, so not worth the $$$.
