Agree. Might as well throw some ground beef in your jambalaya if you're going to use beef sausage.

I've done it with sam's smoked beef sausage and seared both sides and set aside and did the roux with some success. Some of the Texas sausage that are more courser seems to fall apart easier. The one from sam's is a finer grind.
