H2O, nice review. I was there in the mid-90s, pre-European Union. Things have certainly modernized.
Loved the pankooken (spelling? but it's those big flat pancakes) and the patats met mayo (french fries with mayonnaise), as well as the Dutch coffees, beers, sandwiches, and the cheese. Gouda cheese that you can buy here only scratches the surface of the cheese options in Holland (but admittedly, you can get alot of that here now).

It was a great trip. Amsterdam is a place we'd absolutely visit again!
