A little late to the thread but if you take a few bricks (I wrap in foil to keep it sanitary) and put in the oven at 300 for about 30 minutes, wrap in towel, and place in bottom of cooler you got yourself a hotbox. I lay another towel on top and bottom to keep it from touching cooler or food directly. Just place food in foil pans and leave on top of bricks. If you are worried about melting the cooler you can keep the oven at 180-200 degrees and it'll still be better than an empty cooler.
