As a RB he averaged about 50 yards per game, 686 yards rushing was his best year. 19 Total TD's in 3 years as a starter. Great all around player maybe the best, but not a top tier LSU RB.
Those stats are not remotely applicable due to the era he played. He only played a portion of the offensive snaps due to substitution rules meaning he only averaged 12 carries a game for his career in three 10 games seasons (bowl game stats didnt count then).
Fournette had almost twice as many career carries. We also threw the ball less than 12 times a game in Cannon's era (and he was the teams leading or second leading receiver each year of his career) so every team was stacked to stop the run and he still had a 5.2 yd per carry average. Cannon dominated his era to the point of not only winning the Heisman, but being one of the top 10 highest vote getters of all-time thru the turn of the century. Stovall is the only other RB in LSU history to even be a finalist (maybe Alexander?)
While a very strong one, its only my opinion that he is the best RB in LSU history, but its an inarguable fact that he dominated his era better than any other LSU RB mentioned in the argument for best ever dominated theirs.

The more I thought about it, no way, he is not on a list of LSU greats.
