Do these places sell out of meat like other less frequently opened places?

On a Saturday or Sunday, when would be the best time to go, before opening or an hour or so after opening? Thanks.

I can only speak on Hurtado's. I went on a Sunday about a month ago and I went an hour early. There were 2 families ahead of us. When we left, the line was still wrapped around the front of the building. I'm sure they had enough of the main meats, but if you wanted something in particular, they might run out. I'd rather wait ahead of time and talk to the regulars in line and there was an employee who was talking to us in line who gave great insight into what to order (you must get a Birria taco).

I'd like to pound the table for Zavala's in Grand Prairie. Their brisket is amazing, and the sloppy Juan was unique and it helped to take a few bites of it in between the other meats to help break it up with a little heat.

Yes, both places will have a line. Show up 30 mins to an hour before they open and you will be one of the first in.
