In Positano we rented a Gaza boat with a captain for two days. It was like 8 hours each day. Day one we went down the coast swimming, visiting different towns, had lunch, toured caves. The second day we did about the same but we went to Capri. The boat with the captain was our favorite part. Shaded boat, padded bow, tons of wine. It was just the four of us and our boat captain Marco for two days.

Highly recommend a boat charter. We did that for a day. We left out of Nerano and went up to Minori and back. Several stops for swimming and lunch in Conca dei Marini. Granted, this was the middle of high season, but Positano and Amalfi were incredibly crowded. We didn't even try to dock at either. It was much better to see them from the water.

It's just me, but I'd have zero desire to take a 7 month old to one of those towns. I understand that the trip is already planned for Greece and then Italy on the back end, but those are just not places that are conducive for children that young, imo.
