Lodging is very limited and can be extremely expensive because of that(ETA as in $250 for a basic motel 8) that sells out. So its not really somewhere that's great to go last minute.

There's tons to do so I would give yourself as much time as possible. I agree with the above that 2 full days in Yellowstone should about be a minimum and there's easily enough for 4 days or more. 3-4 days in GTNP and at least 1-2 days in Jackson Hole area is highly recommended.

Yellowstone is like a figure 8 and its very slow going especially during the peak times with visitors so expect things to take 2-3 times longer than you would expect. You really don't want to double back for lodging, the best thing is to slowly move through the figure 8/ oval and not stay in the same place more than one night.

Jackson Hole/ GTNP you can absolutely do by staying in the same hotel, and I'd recommend that.
