Pro tip. Master the burning blade skill, that means invest in it twice so it has the shortest time possible to light on fire. Stand directly in front of any enemy that will attack in any way that is not magic. A harpys wing, a coeurls claw, a sword, you get my point. Hold down square and keep it held so the blade is lit you might want to study their attack timings once or twice if you have never seen them but its probably not needed. As soon as their melee attacks swings release square standing in front of them to attack with the burning blade. For some reason that skill over extends the parry window making them almost cheese to use it to pull them off.
