Yes, pretty much this. It could be any starch ground to a powder then reformed into some other food. Ground corn, rice, potatoes, wheat, etc.
Even powered proteins produce a higher insulin spike than a regular ribeye (whole pieces of meat).

Brown rice and potatoes are not processed carbs… they can be found growing in the wild and have nutritional value
