I am in Nashville, this is the only size we have for the office. I want to get a smaller one for times like this, but unfortunately this is all I have for this week.

I've never done this, so not sure. My concern would be the extra empty space when the rice is cooking. Honestly, what I would do is cook 10 pounds of rice, which would be half the pot, just to make sure. Bring to-go containers and let everyone take some home. I wouldn't hesitate to cook half the pot.
