A family of 3 in the lodge room, 5 in the 2 bed, and let's say 2 families of 7 total in the 3 bed.

Lodge Room - 2 adults (176) and 1 child (96) - $272
2 Bed - 2 adults, 3 kids - $948
3 Bed - 4 adults, 3 kids - $1422
Meals for the 2 bed and 3 bed - 6 adults (345), 6 kids (177) - $522

Fully booked nightly revenue with no add-ons: $3164

Let's say a vacancy rate of 15%, which I think is high considering this is a lodge in the smokies. March 20th to November 21st is 246 days.

3164 * 246 *.85 = $661,592 revenue with no accounting for merch, wine sales, add-ons, etc.

I'd love to see how many lodges of each type the have, how many crew they have on site, if they give them full-time work, overtime, etc. Because $15 seems low for that sort of work without free housing.

Nah that’s really low. One night a week is 14.28%. Most of the year when kids aren’t out of school you are probably looking at multiple nights a week vacancy. Someone comes in and does a long weekend and then you maybe get a 1 or 2 night stay during the week every other week.
