This will probably be unpopular here but I use boneless chicken breasts. Cut them up into fairy large chunks, salt and pepper them, and brown them before throwing it in the pot. Never had an issue with it getting stringy even after a few days.

It’s not that it’s stringy, but breast meat has the texture of a flip flop
