Smoked chicken thighs from Bergeron's in Port Allen....go to Jacob's World Famous Anoudille sausage get you some of the best in sausage for gumbo ever....get some breasts cut up into cubes and brown them very lightly so they don't get stringy in da gumbo and then your sausage put in oven for 30 mins at 300 to get da grease out the sausage....cut it up after degreasing and man u got a great gumbo...
