Here’s a link to Minnesota Hot Dish, not necessarily the best, but we make it about once a year for something different.
Minnesota Hot Dish
Sounds interesting. I bet it would work with using cornbread batter instead of tater tots. Throw in some chopped jalapenos and diced onions too. Turns into a Shepard's pie kind of thing.

Yeah, I don’t love the tater tots. Cornbread May be a great idea.
Shepherd’s pie is another casserole type dish that’s good on occasion.
As is the chili pie with cornbread on top.
We actually like this one
I’ll also make chicken spaghetti (with cheese, no red sauce) in a casserole dish.
First recipe on google
What about crawfish fettuccine that always turns up in Louisiana cookbooks (usually with velveeta or Cheezwiz)? Anyone make this or have anything similar?
I also like enchiladas (in a casserole dish, so kinda fits the category). I use flour tortillas, dip them in canned enchilada sauce, add meat, roll up and repeat to fill the dish. Top with cheese and extra sauce and bake. Serve with pico, lettuce, sour cream, cilantro.
