By the time May rolls around, it's still crawfish season, and shrimp are starting to come in. Once we get into the heat of summer, crabs will be running. We'll basically have crabs until it starts cooling off again in late September, early October. By then it's time for oysters again.
In short: Only eat oysters when nothing else is in season (crawfish, shrimp, crabs) and you'll be alright.

IMO this is all bs. These things were when there maybe wasn’t proper transporting and cooling. So you just did it in cooler months.
No need now as long as they are handled properly.
