I asked, specifically, what oils are considered processed. Olive oil is no more processed than butter, lard, or tallow.

Olive oil is good for you up to a point. When it reaches a smoking point, the compounds in it break down and create oxidizing agents / free radicals. That's what separates it from butter, lard, tallow, or other oils like coconut oil.

There is a several step process to getting oil from olives. Animal fat can be used right after cutting it out of an animal.
