$12 bowl at Saigon Noodles is worth every damn penny.

Indeed it is. Saigon Noodles and Blu Basil are favorites of ours. And NICE job Darla looks great !

Thanks! I should’ve included Blu Basil in my post, since their mixed seafood pho is what inspired me to attempt this. I’d brought home leftovers, mostly broth, and added more shrimp and some mushrooms (not authentic, I know).

Regardless, that bowl of pho, and most of the ones that came before, seemed to be as much nourishment for my soul as it was for my belly, just the way a perfect bowl of gumbo is. Comfort food in the fullest and most complete sense.

I plan to respond to many of the previous comments but it takes me a while to compose my thoughts when I’m making a serious post!

Authentic or not, mushrooms are the best and belong in everything.

Everything I’ve ever heard about making pho at home is that it is not, at all, worth the effort. The restaurants get you 98% there with 2% of the effort

Also, I’m trying to avoid the noodles. Would mushrooms be inauthentic to add?

The vegetable pho at Dahn’s Garden comes with bok Choi, carrot, baby corn, mushrooms and broccoli. It is OUTSTANDING! I usually get that and add beef on the side or meatballs.

Great effort though. The best are made by doing stuff people don't normally do. How did it taste compare to Pho place?

How is the pho at Saigon Noodles? I always get the Bun Bo Hue there.

I love the pho at Saigon Noodles, which is owned by the same people who own Blu Basil. I dine in at Blu Basil, but pick up to go at Saigon Noodles, which is pretty small.
