I would tear that up.
It's not a quick weeknight meal, but hands down my favorite nostalgic comfort food meal is country fried steak (cubed steak and gravy) with mashed potatoes and baby limas. Plate is missing a split biscuit with more gravy.

I've only done it once. Should do more often. Nice for a holiday meal which this was.
Reverse seared with salt and pepper - smoked low on BGE till internal temp I wanted and then seared. It was a Prime cut.
Turned out great - found some pics...

I had some not great luck with wireless ones with apps so I got a Thermoworks Smoke - has a little digital wireless receiver instead of a phone app. Accurate and dependable like you would expect from Thermoworks.

I'm not sure. I tried to find their retail locations online but couldn't find a list or map.
I'm in Georgia. Amazon and Walmart carries it. Amazon is pricey. Not sure if WM ships it.

Agreed. And onions chopped very fine or grated. But I prefer not to strain. Just add enough water to get it simmering hard and breaking up and cook the water away. Then add the rest to taste. ...

I try to keep homemade chili dog sauce in the freezer, but this is my favorite canned brand to keep on hand when I'm out.
