It came out better than expected. I did a similar cure/brine method as pastrami. Would probably trim off the fat cap next time and leave in the cure for a couple of extra days.

You really need nitrite to change the flavor and give you the color. Don’t be afraid to use it.

At least you admit to it. That looks like a hell of a process that was also accompanied by pictures, which makes it even better for someone like me that’s going to be eating frozen pizza again.

I ate it raw and on a sandwich.

I wish Austin still had a Katz deli. I miss that place.
