Vacation spot in the Caribbean?

So the wife and I are expecting our first child to be born in about 7 months. Before our life is ruined we are planning a nice vacation somewhere in the Caribbean. Ultimate goal is to escape the brutal Minnesota winter, lay at nice beach, enjoy the weather, food, and fun activities.
We are thinking about 5-7 days vacation, spending around 3g total. Is that realistic? Anyone with personal story vacationing in the Caribbean?
Update:
Got a 6 day stay all inclusive at Riu hotel in Cancun. Two people 1700$ total including flight from minneapolis.

Went to St. John back in June. Very nice and you can hop between the USVI and BVI easily.
