Depending how far down the panhandle you are, Savannah might be pretty close to halfway. One of my favorite cities.

I was thinking Savannah but we have the family and my wife is pregnant.
Tomorrow is a huge St. Patrick's day town for Savannah. Plus because of this most of the hotels are booked.

Asheville is just a cool town. Tons of craft beer and restaurants. Little shops. Biltmore House. Beautiful area too

If I-65 is an option you must be located west of Tallahassee. In that case I would probably go to Asheville, rather than Savannah as you probably live relatively close to the beach.
But, there is a recent post about places to eat at Tybee Island which is near Savannah. Here's the link.

We took a bus tour in Savannah and it was worth doing; they take you by all the parks and give interesting facts about the city's history. There are hotels and restaurants off of/near Bay Street; but there are cheaper, less convenient, ones near I-95.
If you go to Asheville you can take I-985 off of I-85 north of Atlanta. I985 ends near Gainesville, GA but US 23 continues into NC. There are numerous routes into Asheville off of 23 but I would consider Hwy 64 through Brevard.
I highly recommend Jamies's Creole Brasserie on E. Main St. in Brevard for a meal.
If you take US 23 up to US 19 check out Lake Junaluska, you can just drive around it. Google Waynesville, NC and you may find something there that interest you.
In downtown Asheville there are quite a few restaurants and sometimes street musicians. There is the Biltmore House, that cost about $75 I think, and check out Grove Park Inn. I have heard good comments about Sierra Nevada Brewery but have not been there; they have tours and you can book them on line.
If you are just staying one night in the area you won't have a lot of time to do much. If you are just not in a hurry to get to DC consider taking the Blue Ridge Parkway/Skyline Drive. BRP is free but Skyline Drive is through Shenandoah National Park and there is a fee. You can only drive ~ 45 mph and that gets old after a while. Skyline Drive's northern most point is near I-66 which goes to DC. Lots of scenic overlooks and an ok restaurant at Mount Mitchell, NC.
If you go to Savannah there is not much to stop and see between there and DC unless you want to detour quite a bit. But, there is the Airborne Museum in Fayetteville, NC that is not too far off of I-95.
If you want to stay near the I-85 route then the Greenville/Clemson SC area is supposed to be nice. Charlotte, SC has lots of restaurants.
