Looking for something within a 6 hour drive of NOLA. Kids are 4 & 2 and we’re looking to go Mardi Gras week. Any suggestions or other ideas? Would like mainly outdoor activities due to the Vid.

Great Wolf Lodge in Dallas. Sign up for their emails before you reserve so they'll send you discount codes.
Dallas also has a ton of other things for kids.
Houston has a very nice Children's Museum and Butterfly Museum.

Lego Land in San Diego is perfect for the 4-year-old. Geared toward that age.
I know it doesn't fit your criteria.
Try San Antonio. There is a lot to do out there for all ages and the temperature will be warm.

There’s a huge toddler section at Sea World San Antonio. And you can see the animals if they’re into it.
