Spain for 3 wks, no itinerary, no restrictions, any recommendations?

Going to Spain in a month for 3 weeks. I'm going alone and currently have no plans and nothing booked except the flight.
All I currently know is I'm flying into Madrid and will be renting a car for the duration (after I leave Madrid). I'm trying to plan as little as possible as I want this to be more of a go where the wind takes me type of trip.
A few ideas I have in mind, with some that I'm definitely doing:
- Real Madrid game
- Bullfight
- Tempranillo (one of my fav wines) vineyard
- Ferry trip to Morocco
- Drive to Portugal
Possible cities to see:
- Barcelona (definite)
- Toledo
- Seville
- Granada
- Rondo
- Valencia
- Ibiza?? (Is this doable?)
Any recommendations and must sees are greatly appreciated!

Ibiza is like an hour flight from Barcelona. What are you worried about exactly about it being doable?

I guess more so is it worth it?
I will have a rental car so I'd have to find somewhere to keep that.

Northern Spain/Basque country is worth checking out. Great food and scenery, very green. Also some good beaches.
La Rioja is a great wine region.
San Sebastian is an awesome city.

Any particular reason you need a car for the duration? Traveling around probably your best bet but might be easier and cheaper (and maybe less stressful) to just use trains and only rent car if needed (and even then can probably ride share).
I dont know if Real will still be playing in a month, but if the liga is still going, I was able to get tickets to a FC Barcelona match by going to the stadium on the morning of the match. Might be a similar system at other liga stadiums.
Barcelona, San Sebastien, and Pamplona are all great cities and all share a fierce sense of independence and difference from the rest of Spain. Barcelona might just be the best eating city in all of Europe. Have tons of restaurant recs if you want them.
Have fun and dont overplan is my best advice.

I just want the freedom of going wherever whenever. With no real itinerary I think it'd be best. Also, it's actually super cheap to rent a small car over there. It'll be about $150 (plus gas of course) for my entire trip, which is actually cheaper than all the train tix I priced out.

If you are going to check out rioja, I recommend staying in Logrono, it is central to a lot of wine bodegas and has a cool feel.
Definitely check out La Gurdia, it is a beautiful fortified midevil towns set on a hill with awesome views of the wine country.
Plus, rioja wine is delicious and relatively inexpensive.

I enjoyed Marbella. Also, I LOVED the Alhambra in Grenada. I wish I remembered the name of where we ate but I recall it having the most amazing view from near the top of the mountain.

spent 3 weeks in spain last year. your itinerary is doable and hits the high points. i would not go to morocco unless you want to put say u were in africa. too much better to see in seville and southeast spain. segovia was enjoyable but toledo may have been most impressive panorama other than ronda. el born in barcelona is best roaming area in that city. plaza mayor and plaza del sol area favorite part of madrid.

I didn't do Madrid but sounds like you'll be up for driving a lot. The ferry to Morocco is a great idea and you'll be able to see Gibraltar as well. Watch out for shitty monkeys, but other than that it is worth seeing.
After that, I would drive up through Andalusia. The Alhambra is an absolute must see in Granada. Honestly one of the highlights of Spain. The white towns are not far out of the way, and particularly the bridge in Rhonda is worth a stop.
All this is on the way from Gibraltar to Barcelona, which is one of the best cities in the world. Can't go wrong anywhere, Park Guell to Sagrada and obviously La Rambla. Barcelonetta is a nice beach excursion, and seeing the Olympic Park and stadiums is pretty cool as well.
And shite, with three weeks and a car, you could even have time to head north from Barcelona into Coasta Brava and maybe even make it to Cannes in South of France or Monaco. We did that in separate trips but with three weeks you could pull it off.
But no matter what, make time for the Alhambra.
