Southwest - Lost Bag, What to do?

So SWA seems to have somehow completely lost one of my two bags from a recent trip. Tomorrow is the last day they have to find it until they hand it over to national customer service which has the ability to check with other airlines if they might have it. They then give it 5 days to find the bag, otherwise it's insured up to $3,500.
They gave me a $50 travel voucher when it originally was not on the carousel, what should I demand as each day goes by and no bag? The bag itself is the most expensive piece thats missing, everything inside probably values at $1500, which leads me to my next question..
If they deem that the bag is lost do I highball them and shoot for the $3,500 plus some travel credit? This has never happened so new to these negotiations.

Actually, say you had over $5000 of crap inside and hope they give you the $3500.

Kind of hi-jack but also related to the topic.
Recently has "delayed bags" on a southwest flight. Long story short, my original flight was delayed due to "weather" at the connecting airport, and I was going to miss my connection. Southwest tried to rebook me through Denver, which would've been a 5+ hour layover and arriving at final destination close to midnight. After some back and forth, I got themto rebook me through Phoenix, then Houston. This was very last minute and they told me beforehand my bags would likely not be on those flights with me.
When we got to Phoenix I went to the customer service counter to see if they could update me on the status of my bags. They told me they have no way of tracking bags until they reach their final destination. I called their customer service number and was told the same thing. I asked all of them if that meant southwest's baggage handlers were manually unloading, rerouting, and reloading every single bag for every single connection flight, and they all told me yes.
This can't possible be true, can it? Southwest has a lot of connecting flights, many of them with very short(<45 minute) turnarounds. They would need an army of baggage handlers at each airport for ~14 hours each day to to actually do this, right?

I don't ski. But I've traveled to many week long destinations with just a carry on.

That's what I would assume. But both the service desk agents and the phone rep I spoke to all told me they don't. They're full of shite, right?

They have ramp agents (baggage handlers) doing the work....
They have am shifts and pm shifts......
So yes it is possible.

Man, that is just really hard to believe.
So they have ramp agents that handle ~150 bags on each flight and manually reroute them to the necessary connection flights(again, many with <45 minute turnarounds)?
How many ramp agents are working on each of these am/pm shifts?

Yes they do.
Depends on the station. But usually each flight has 2-4 rampers working the flight.
Usually 1 agent takes the bags from the plane and brings them to baggage claim and drop transfer bags at the gates that they are supposed to be sent to. Big stations may have 2-3 agents who take bags to the different gates.
