Send me somewhere for my 40th

The wife (no pics) and I turn 40 in 21 and we want to celebrate it, but we are struggling as to where. We are looking at a Feb-April timing and would like to stay away from the cold. We are not lay on the beach for a week type of people and want to do something where we have an adventure, memory and learn something.
Any recommendations?

Do you scuba dive?
If you have not tried it - that is my recommendation. I started for my 40th. Best time ever, and now my kids and I have some fantastic memories from our annual trips.
ETA: you don’t have to “certify “ just to try it. Pick a spot that offers a “discover scuba “ course. 30 minutes video, 1 hour instruction in shallow water and then you can go on dives of 40-50 feet deep.

Utah big 5 national parks. Can make it to the Grand Canyon also. Stay in Moab and do a Jeep, 4wheeler or whatever you like tour.

It’s pretty easy to get to Peru and the time change is minimal. Machu Picchu would be a sweet 40th.
Lima->Urubamaba/Machu Pichu and wrapping up in Cuzco or heading north would be solid. Other variations also possible.
Look up Tambo Del Inka if you’re balling and want to take a train straight from your hotel to Picchu base.

What other things? Drinking? Partying/nightlife?
Or, exploring, sailing, fishing, kayaking mangroves and sea turtle sanctuaries, etc?
I guess really, you should narrow down what "things" are first before you think of destinations.
Outdoors things?
Casino things?
Exotic Food things?
Alcohol things?
Shopping Things?
There are plenty of places that offers everything. Some places offer the 'best of' some of those things, but hardly any of other things.

Stayed there in 2017. Nice hotel. Didn't use their train station because the timings weren't great.
Ollantaytambo station isn't that far anyways.
Also stayed at their sister property Palacio Del Inka in Cusco. Convenient since it was a short trip, I had Tambo forward our bags to Cusco as we went to MP. Then we trained to Cusco from MP once we came down. Saves time once you're done with the Sacred Valley.
The famous mountain side glass pod hotel rooms are between Urubamba and Olly. I wouldn't want to spend multiple nights there since you have to climb up and down whenever you want to do anything

Thailand, has everything and is super cheap once you’re there. I went in February for my honeymoon right before everything shut down and it was incredible.
