Any advice on things to do/see in Key Largo? Any particular restaurants that are must do? TIA

Alabama Jacks on Card Sound Rd.
Are you set on Key Largo? I'd maybe suggest moving a little further down, to Islamorada or Marathon, if not.

We stayed in Largo for a couple of days on our way down to Key West several years ago.
Lots of great snorkeling/diving in Pennekamp State Park (it's a marine park).
I believe there's still a boat used in the movie "African Queen" on display at one of the hotels (I guess it would mean more if you've seen the movie with Bogart and Hepburn).
There's a sufficient amount of bars/restaurants with cool views, but otherwise not a whole lot going on in Key Largo IMO. As the other post said, more going on further down the road.

Good ideas in the thread so far, but like others have said, head further south if you want more of an authentic Keys feel.

The Fish House is really good. Really liked the hogfish.
I second the Pennekamp recommendation. Nice place to snorkel with family.
Bahia Honda State Park is about 60 miles west of Key Largo, but they have the best beaches in the Keys.
A stop at Robbie’s to feed the tarpon is a must when you visit the Keys. Have fun.
