If you bank is any size you can order foreign currency and get the best exchange rate, in my opinion, and can deposit any remaining when you get home.
I tip the same as in the states and I hand it to the person I am tipping anywhere outside of the US. Some places are confused if you leave it on the table or bar.
100 Peso notes are handy. 500s are also for bigger purchases....roughly $20- $25....
I find it confusing to use dollars abroad. They are universally accepted in my experience and preferred in some cases but doing the math once is far easier for me. But it can get costly if you pay the exchange rate in rural exchanges or tourist places....thats why I always buy currency from my bank and deposit any left over. My bank will even take coins...that is kind of unusual....

Looking at this exact trip and hotel in April. Any advice on what to do, where to eat from your trip? And seems like you recommend the Westin, which seems like a good deal.

If you forgo Isla this trip, keep it pegged for one of your next ones.
Ambergris Caye (Belize) was once a sleepy island and the main town there, San Pedro, was super chill and everything closed at 8:00 PM, including the bars. Now it is full of big hotels, tons of tourists, and has lost everything that was charming about it. Don’t get me wrong, it is still a fun place to go, but I’m a small-town kid in like small islands, unfortunately ambergris caye is no longer that.
I am very hopeful Isla does not go through the same transition in the next 10 years or so.
