Would forcing voters to actually cast the vote for the candidate in each race be racist? sexist? homophobic?

No. They've already eliminated it in multiple states and Texas will have no straight party ticket next race.

States have broad authority to conduct elections as they see fit.
You could maybe pass a federal law prohibiting it from federal elections but outside of that it would be a state by state thing.

But your phrasing makes it seem like you could mean “eliminating the ability to vote for all candidates of a party.” That wouldn’t be allowed. But I think they should eliminated party identifiers and requie people to actually learn about candidates beforehand in order to vote straight ticket. I don’t know why they are included anyways, since the parties are largely important for getting on the ballot, or at least easier. But I don’t see it’s value for the purpose of the legal process of voting for candidates on a ballot in the election.

Yes, when people say they vote straight republican or democrat it means they selected an option that essentially autofills every position with that party's candidates that are on the ballot
