Why does the Left think health care is a "Right"?

Because the nature of the word 'right' has devolved from either a negative context, ie things to be protected from, not entitled to; or a privilege that is coupled with a greater obligation. Instead, it simply means, 'a scarce resource which would be cool if everyone had it'.

It is a right to every single citizen, if you can afford it. No one is preventing anyone from purchasing health insurance. However, you do not have a right to use taxpayer money to pay for your health insurance.

healthcare is a right. You have a right to have ACCESS to healthcare.
Government subsidized healthcare insurance, however, is not a right. You don't have a right to have that.
That COULD however be a privelege of living in this country, but a wasteful one.
You know , for the time and money that have been spent on both the ACA and the subsequent attempts to repeal the damn thing, we could have built a 24/7 health clinic in every county in America, staffed them with doctors and nurses paid through lower salaries in exchange for free education and charged according to income, including free to super low income people and done away with this entire mess.
No one in Washington actually cares about fixing anything.

Access to affordable health care is incredibly important in modern society. I'm not left leaning, and I have a lot of trouble with your question.
Now, if you want to debate how we grant access to health care for the poor, then perhaps you can accuse the left of putting too much responsibility on the government.

They think everything they want is a right. Education all the way through graduate school is a right. Cell phones and internet are rights. Housing is a right. Food is a right. Water is a right.
God forbid anyone have to ever work to provide food and shelter for themselves and their families.
The problem is the well-meaning are suckered in by the communists. The communists know that if the basic needs and wants of men are met by the government, not only will those people stop working, but they will allow themselves to become completely depended on the government and do whatever that government tells them to do. As an added bonus, the costs of providing for ever more and more people (their reproduction is incentivized) will collapse the current regime creating the climate where by the current "free" and "capitalistic" society can be replaced by a communist one.
Independent people make for poor slaves.
