Make the roux. Get it dark. Then you put in your holy trinity (onions, bell peppers, garlic).

And cook some rice.

Better have a sharp sharp knife to filet those jelly’s.

I ate some jellyfish (assuming cabbage head) at a Dim Sum restaurant a couple of days ago. It was pickled in a sweet chili sauce. The taste and texture was ok, but I wouldn't want to make a meal of the stuff.

Sub garlic for celery baw. Add garlic later.

That same type of jellyfish were thick in the pass by the grand isle bridge last Saturday. Some as big as 14-16" around.
