WAGYU Beef tallow

I am thinking about buying some online and adding it to my prime brisket when I wrap. Has anyone tried the South Chicago Packing Wagyu tallow?

I have. It’s delicious. I scoop a big hunk out and smoke it too, not just add at the wrap. Gives the beef a great flavor.

I have a tub of it I got as a gift. I mainly use it as a binder before I rub brisket, butt, ribs whatever. It's good for that. I've also used it to cook with in place of bacon grease. I prefer bacon grease.

I don’t have Wagyu tallow but I got grass fed tallow. I’ve fried some alligator and chicken in it and it was phenomenal.

I’ll usually slap some grass fed Ghee on my ribeye before I sear it though.

I got some not too long ago… it’s good, but I don’t think it’s any better than rendering your own from brisket trimming.

This is what I use it for as well. I haven't used it for much else. Think my kid made some brownies with it.

well the label says 100% pure premium rendered wagyu beef fat, i'd like to see the fine print. Does that mean there is 100% pure waygu fat in there. or is the fat 100% waygu, because its hard to believe there is enough 100% waygu cows for that plant to produce that amount of tallow. So im guessing that they are getting fate from all different breeds and maybe only require a bit of waygu strain to be considered 100% waygu.


or i might be way off in my assumptions.

I use it as a binder on my briskets and when I wrap in butcher paper, I put down a layer to add some moisture back to the brisket during the rest of the cook.

So far I like the taste it gives non Waygu briskets. Makes it a little bit richer.

I put a TBSP of it and some kosher salt in the vacuum sealed bags when I do sous vide steaks. So good.

I’m a big fan too, but it sucks when things “get big “. Prices skyrocket.

I used some reg beef tallow from Iversteins market on Perkins Road. I’d bought a jar from Whole Foods but it looked yellow and too liquid for my taste.

Man have we fell this far as men? Go to the damn butcher at your local grocery store and tell him to wrap you up how ever many pounds wagu fat trimmings you want. Probably give it to ya. Most ive ever paid is like $5. Jesus have we really gotten to where we ordering fat? and paying premium???? shite we are stupid

We slaughter our own cows for beef. No store/butcher involved.

Hell in my neck of the woods you can’t even buy prime at the local grocer. Now we do have a meat market that slaughters their own grain fed herd and some of those steaks I have bought looked mighty close to prime imo even though they aren’t graded

So my thought is this....

Wagyu is expensive beef because of the marbilization. In this case your not buying the beef, just the fat. So I don't know that wagyu fat is any better than redneck cow fat. I make my own tallow with the trimmings from each brisket. I can't say that injecting it ever did anything worthwhile to an already nice brisket though. As with all things brisket, your mileage may vary.....
