Uses for Bear Fat

I’ve got about 10 pounds of bear fat I’m going to render into oil soon. I’ve heard great things about using the oil in making biscuits, pie crusts, sautéed veggies, and even using it to waterproof boot leather. Does anyone else have any favorite ways to use the fat?

Great for tamales, believe it or not.

Excellent, thank you! I just harvested a mess of corn that I was planning on making some tamales with. I bet it’s going to be awesome

I knew a guy that used goose fat for tamales as well. Absolutely delicious either way.

Good to throw out and let the coons eat it. Pork fat is superior and bear fat in my opinion is disgusting. Also depends on what time of year you killed it and what they were feeding on.

You just harvested a mess of corn in November?
As for the bear fat, use it on leather. Don't cook with it, unless you only have bear fat to use as oil.

One of the hand-crank kinds, made in Mexico. I don’t remember the brand off hand.

I got it out of the field in late October. I had to travel to Europe for work and that trip delayed my harvest longer than I would’ve liked, but it all worked out okay. Didn’t seem to bother the corn much.
As for the fat, I’ll report back if you’re right about it being bad for cooking with.

I don't know personally, but people I know who know say it's among the best fats when rendered into oil, so light and smooth you can drink it from the jar. In fact, one of the Foxfire books quotes mountain people saying the same thing, they use it as a stomach ache remedy.

As an update to this post, I finally got around to making some tamales last night with homegrown corn, bear meat, and bear fat. They were excellent, so thank you for the tip! My 8 year old son and my buddy helped me make them, and we all loved how they came out. It’s a lot of work but worth the effort, especially if you have a couple people to help out. I would highly recommend using Bear fat and bear meat in tamales.

I have to say, after I rendered the bear oil and started experimenting cooking with it, it’s become one of my favorite ingredients to use in the kitchen. Any recipe that calls for vegetable oil tastes great when the bear oil is substituted. I used it for tamales last night, I’ve used it in corn bread, and I’ve been frying eggs in it, and all of them taste better with the bear fat. The oil doesn’t have an overpowering flavor so it seems to go well with everything.
