Had an ice cold Miller Lite while making a pot of Cajun Crawfish Monica for dinner this evening. Must do more often!

Saute a couple of bunches of green onions in a stick of butter.
Add crawfish (preferably the semi-cooked ones and not boiled) and cook for a bit.
Add heavy cream along with cajun seasoning (I like Emeril's Essence but Tony's works too).
Some people put parmesan towards the end. I like to add some parsley as well.
Serve over pasta.
(Feels like I'm forgetting something in all of this)
Also, I want to say Crawfish Monica originated at Jazzfest and they never released the actual recipe.
