Sausage Seasoning

I usually buy my seasoning from Harvest Foods in Marksville, but they have been out of their blend for about a month. Targil in Opelousas makes this “Harvest Foods” blend but does not sell it directly to the public. What other seasoning can I get that is good for smoked sausage?

Oak Grove Smokehouse sells sausage seasoning, and you can order online. LINK

Rouses carries the seasoning they use (Old South) in the back of the butcher shop. Works fantastic. Especially their green onion and italian.

AC Leggs can be ordered online and is top notch

It's really easy to mix your own.

I've used this guy's spreadsheets a few times and they are great. He uses the KISS method on his recipes and I can appreciate the hell out of that.

Does any one having any suggestions for the casing?

Not sure what size or type I should get. I plan on grinding up my deer next year into link sausage.

LEM casing from Academy works in a pinch but I order mine from the sausage maker dot com

If you want come by my store crispy cajun fried chicken in Marksville and i can hook you up with my seasoning i use for processing sausage here. I would need to know how m any pounds of meat you have to know how to mix it.

Damn I may take you up on that. Ive got about 150+ lbs to make. If I havent found it the next time I go to AP, I will def let you know.

Rebel Butcher smoked sausage seasoning is wonderful. They make the seasoning for Vines.

Also, I think Got Blaze here makes his own and sells it. He gave some to another member recently IIRC.

I’ll have to call today, didnt see any sausage seasoning on the website.

Rebel has the best sausage seasonings I’ve found. They have everything you need for processing, minus high temp cheese.

You can buy it on the website and it’s carried in some stores in SW Ms. I buy it at Vines or Mabells in Summit Ms.
The Rebel butcher store is right behind Bass Pro in Pearl, Mississippi.
