Sausage casings

Anybody know if anyone sells sausage casings in the New Orleans area?

just go ask any butcher at any store and they will bring you out a pack of them from the back.

Those suckers have really gone up in price over the years. Made 50 lbs of sausage last night. One batch Italian and one batch chorizo.

^^^done this too, at a local meat market. Ask if they will sell you a "hank" of casings. Sometimes, they will just give you one.

Rouses had it but you have to buy the entire pack. Luckily you can freeze it. Not cheap

I would not advise freezing them. Drain them add 3/4 non-iodine salt mix well and they will keep indefinitely in the fridge.

Paying $8 for a pack containing approx 50 ft of salted casings which is just enough to do a 25lb batch. Local grocer here wanted $20/lb for fresh casing. Found a meat market on hwy 43 that I am buying the $8 packs.
A hank would be roughly 4x the amount of casings I am getting in the little packs here

Not sure were you got this information. The hanks I purchase will do 100/125 lbs. of sausage.

Rouses and Dorignacs. Dorignacs does not stock them, but just ask the butcher and he will get them from the back for you and put a price tag for you.
Also, I have tried the salt cured natural casings from Academy and they are about the same as fresh after rehydrating them.
