I make this roast often. Great to bring to deer camp. Get a 3 lb rump roast, 1 stick of butter, a pack of Au Jus gravy mix, 1 packet of ranch dressing and some pepperoncini peppers (6). Sprinkle ranch and Au Jus packets on roast then put stick of butter on top. Put in crockpot, add some of the juice from the peppers along with a little beef stock and cook on low. Wait until roast is 130 degrees. Delicious!!

Only 130 degrees? That seems low for a roast, would be a slicer for sure , I would go much longer until it shreds pulls apart , makes great gravy and poboys

Why anyone would rather use a rump roast over chuck blows my mind. I grew up on rumps then had a chuck and I have looked back

Deer hind quarter roast

Stab several holes spaced evenly into roast. Stuff holes with garlic and your favorite seasoning. (Tony’s works)

Rub olive oil on and season the outside with Tony’s ( or whatever you use) plus oregano.

Brown the hell out of the roast in black iron pot in a bit of oil.

When roast is browned on all sides, remove it and throw some onions bell peppers etc and pull the brown of the bottom of the pot. Probably need to scrape the bottom with a flat spatula. Sauté onions for just a little bit and add roast back into pot.

Add water until roast is about 3/4 covered.

Put in oven at 350 for 4-5 hours.

I'm on the fence, but leaning this way. The food board is a little too snobby for a deer camp type food thread and isn't the target audience for a thread like this.

For me, deer camp food was always hearty stick to your ribs type slow cooked stews and braises after the weather turned cold and wet. Before then, it was always grilled hunks of varied animals. Mississippi Pot roast was DEFINITELY on the menu out there. You can throw it in the crock pot the night before, go out on a morning hunt when it's 35 degrees and raining, and when you come in, there's a hot roast waiting to make you feel better about not just sleeping in when you looked out and saw 35 degrees and raining. Also, use a chuck roast, not a rump roast. It'll make you much happier.

That was what I was told to use. I'll try a chuck roast next time. Thanks for the tip!

Emeril’s Roast beef poboys

The beef on its own is amazing over rice or mashed potatoes or anything.

MS pot roast and you are correct it’s about the best damn beef roast you will ever eat! Only way I cook mine the last couple years

ETA: I also slice up a couple onions and throw a container of mushrooms in mine. Lately I leave out the stick of butter and it still comes out fine.
